Far from pro but wen I feel like this about a tub I give them a small drink of peroxide water mix down the side and a light spritz across the top.. If the fruits aren't discolored and sick looking, they should be perfectly fine. if they turn brown at the bottom, or get kind of blotchy looking, they may be bacterial.

I've removed as much of the casing layer I applied as I could, and the smell in one tub seems to have gone. The other tub still has a faint smell. I'll keep an eye on them. Luckily I've got more grain colonising, but it's a few weeks out, I think...
