My guess is bacteria if you shake and it starts to come back and stalls again its bacteria on a side note what are the temperatures any fluxes

Sour rot is a possibility but I'm not certain if sour rot is a result of bacterial contam, or more based of the h2o content being so high the corn just starts to breakdown and decompose... I'm not even an amateur mycologist... mushy just blesses me from time to time with it's bountiful gifts

Yea. A couple jars ended up w sour rot. I rushed these jars. You live and learn. Two big ones survived. I just knocked up some new ones using LC and agar isolates. ::Knocks on wood::
