I would let it ride another week. You want it completely taken over by the mycelium. Best to wait until it starts pinning on its own

You can fruit anytime. Cubensis are aerobic organisms.
Air will not hurt it after it is spawned to bulk. Infact, in low oxygen and high carbon dioxide environments, contamination has a better chance of taking hold (*From RR's notes on cultivation)
