They look fine, they just look like they could use more food. Try adding one cup worm casings per brick of coir and theres a gypsum tek on shroomery too.

If youre brave you can also go for some straw. But be sure not to use hay! Only use straw!!!!! Hay will fuckin ruin your entire batch. I learned this the hard way.
But hay is a v cheap v effective additive to cvg.
